Method of Brewing the Tea

    Quality of tea is not only controlled by the essence of tea and good or bad skills of producing and baking tea, it is also deeply affected by the correct method of brewing tea and selection of tea sets. And for each kind of tea, the amount of tea used for brewing and time of brewing may be slightly different. The following is a brief introduction of the correct method of brewing Pouchong tea and which is just for reference. Do not stick to conventions by simply adhering to every detail as which may make you apparently uncomfortable so as to have less fun of enjoying the tea. Use it as a reference and make appropriate adjustment; it is good to be relaxed and make the tea with taste, aroma and density you preferred.

    First select a round or high kettle , made of highly dense material . It should also be easy to pour tea from . Either the serving pot or teh drinking cups should be white in color , in order to better appreciate the tea and to check its density .

    Using a teaspoon , place an appropriate amount of tea into the kettle (about 1/2 ~ 2/3 full﹞and add 90。C ~ 95。Cboiling water . Steep for about 20 ~ 30 seconds , and then serve . Add boiling water for the second steeping . Add an additional time of 10 ~ 20 seconds for each steeping afterwards before serving . The tea can be steeped for more than 4 to 6 times .


Hot Water: For about every 1 gram of tea , add 50cc of water . Steep the tea leaves for 3 ~ 5 minutes , then pour and serve . If you want to brew for a longer time , simply add more water or take out half of the tea leaves .

Cold Water: For every 8 grams of tea , add 600cc of water . After steeping the tea leaves for about 2 hours , the tea will be ready to drink . While drinking , you can also add more water . During a hot summer day , refrigerating the tea will improve both its flavor and fragrance . It is important to rememmber that for cold teas , you should select tea leaves which are especially fresh , and have been dried by low heat fire .
